The gentle sweetness of plump kumquats,
paired with the fresh, uplifting aroma of amanatsu, a Japanese summer citrus (Citrus Kawano-natsudaidai).

We use whole kumquats, including the peel, to bring out their natural sweetness and subtle richness.
For the amanatsu, we add a small touch of finely chopped peel to the juicy fruit.
Within its bright acidity, a soft hint of citrus bitterness quietly unfolds.

Not overly sweet, but refreshingly light.
And yet, there is a comforting warmth in every spoonful.
